XRF and GC/MS analysis of doum fruits pulp (Hyphaene thebaica)- Sudan

Abstract
In Sudan doum fruit pulp is a popular forest food which finds high consumption by children. This study was conducted to investigate the chemical constituents of this fruit from nutritional suitability sight of view. Fresh naturally dried Doum fruits were harvested from their trees at Khartoum state. The fruit pulp was separated and ground to powder. Minerals content was determined by X-ray fluroscence. GC-MS analysis was carried for fruit pulp aqueous extract. The XRF analysis showed minerals availability as, K (2.66%), Ca (0.373%), Fe (0.00596%) and Bromine (0.00447%). The minerals, Sr, Cu, Pb, Zn, and Rb, showed at trace levels. GC-MS analysis indicates a presence of (34) compounds dominated by tris (hydroxy methyl) nitromethane (27.67%), 3-O-methyl- D-glucose (15.33%), 5-hydroxy- methyl furfural (7.49%), dl-glyceraldehyde dimer (4.19%) and maltol (3.24%).
