Extraction of polyphenol in bitter melon (Momordica charantia)

Abstract
Bitter melon (Momordica charantia) is traditionally known for its medicinal properties such as antidiabetic, anticancer, anti-inflammation, antivirus, and cholesterol lowering effects. It contains many phenolic compounds that may have the potential as antioxidant and antimutagen. We evaluate and select bitter melon to extract polyphenol. Main technical factors for extraction: ethanol 70o, material/solvent 1/15, temperature 70 oC, time 120 minutes, pH 3.5, two step extraction recovery 87.27%. Main technical factors for acid treatment: ratio of extract/water 1/15, temperature 70oC, time 45 minutes, deposit 36 hours. Main technical factors for purification: polyphenol/ethyl acetate 2/1, three steps of purification.
